Hearty Potato and Meat Soup: A Comforting Classic

There's nothing quite like a steaming bowl of potato soup to chase away the chills. This recipe takes the classic potato soup a step further by adding a variety of vegetables and succulent meat for a hearty and satisfying meal.

Ingredients:

  • ½ kg potatoes (about 4-5 medium potatoes)
  • 200 g meat (beef, pork, or sausage, your choice!)
  • 1 carrot, chopped
  • 1 parsnip, chopped
  • 1 celery stalk, chopped
  • 1 parsley root, chopped (can be substituted with more celery)
  • ¼ head of white cabbage, chopped
  • Salt, to taste
  • Fresh greens (chopped parsley, dill, or chives) for garnish
  • 1 onion, chopped

Instructions:

  1. Prep the Meat: Choose your protein! Lean ground beef, diced pork shoulder, or even sliced sausage will work well. Cut your chosen meat into bite-sized pieces.
  2. Simmer the Stock: In a large pot or Dutch oven, bring 2 liters of water to a boil. Add the prepared meat and cook for about 15-20 minutes, or until partially cooked through.
  3. Add the Veggies: While the meat simmers, chop up your vegetables. Toss in the chopped carrot, parsnip, celery, parsley root (or extra celery), and white cabbage. Let them simmer with the meat for another 10 minutes.
  4. Introduce the Star: Peel and quarter your potatoes. Add them to the pot and stir everything together. Season generously with salt.
  5. Simmer to Perfection: Continue simmering the soup until the potatoes are tender and cooked through, about 15-20 minutes.
  6. Finishing Touches: Once the potatoes are soft, remove the soup from heat. Taste and adjust seasonings with additional salt if needed.
  7. Serve and Enjoy: Ladle the hot soup into bowls and garnish with a sprinkle of fresh chopped greens like parsley, dill, or chives.

Tips:

  • Creamy Twist: For a richer flavor, after removing the soup from heat, stir in a cup of heavy cream or half-and-half.
  • Veggie Variations: Feel free to experiment with other vegetables! Diced green beans, corn, or peas would all be delicious additions.
  • Spice it Up: Add a pinch of red pepper flakes or a teaspoon of dried thyme for a touch of warmth.
