Creamy Courgette and Cream Cheese Soup with Sourdough Croutons
Introduction
My mum taught me how to make this super creamy courgette soup a few years ago, and it has become one of my favorite comfort foods. It’s delicious, warming, and incredibly easy to prepare. Whether you’re a seasoned cook or a beginner, this recipe is perfect for you. Let’s dive into the details!
Ingredients
- 4 large courgettes
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 1 chicken stock cube
- 1 liter water
- 200 grams cream cheese (e.g., Philadelphia light garlic and herbs)
- Salt and freshly ground black pepper
- Sourdough bread for croutons
Instructions
Prepare the Courgettes:
- Wash the courgettes and slice them into 2cm thick rounds, leaving the peel on.
Sauté the Courgettes:
- In a pan over low heat, melt the vegetable oil and butter.
- Add the courgette rounds and cook for about 10 minutes, stirring occasionally until they become soft in the center.
Create the Broth:
- Dissolve the chicken stock cube (or vegetable stock cube if you’re vegetarian) in 500ml of boiling water.
- Add the stock to the pan, mixing well.
- Pour in another 500ml of boiling water.
- Cover the pan loosely with a lid and let it simmer on low heat for 30 minutes.
Final Touches:
- After 30 minutes, remove the lid and let the soup simmer for an additional 10 minutes.
- Then mix with the cream cheese.
- Use a handheld blender to blitz everything until smooth.
- Add a little of salt and /or pepper.
Prepare the Sourdough Croutons:
- Cut the sourdough bread into small cubes.
- Fry the cubes in a frying pan with a little olive oil and butter until they turn golden brown.
Serve and Enjoy!
- Ladle the creamy courgette soup into bowls.
- Top each serving with a few sourdough croutons.

Notes
- You can use any chicken or vegetable stock for this recipe.
- If you’re a vegetarian, opt for vegetable stock and still enjoy a delicious soup.
