The Perfect Pot of Tomato Soup: A Recipe with a Twist

Tomato soup – a classic comfort food, enjoyed by people of all ages. But what if we told you there's a way to make it even more delicious and nutritious? This recipe takes the traditional tomato soup base and adds a delightful twist with vibrant peppers and fluffy rice.

Ingredients:

  • 2kg ripe tomatoes (plum or roma tomatoes work well)
  • 2 onions
  • 4 bell peppers (any color combination you like)
  • 1 tablespoon rice
  • 1 tablespoon sugar
  • Salt
  • Fresh greens of your choice (chopped spinach, kale, or basil are all great options)

Method:

  1. Prep the Veggies: Wash and chop your onions and peppers into bite-sized pieces.
  2. Tomatoes Two Ways: Here's the twist! You have two options for the tomatoes. Traditionally, you can chop them and add them to the pot with the onions. But for a smoother texture, you can grate them raw – skin and all! This adds a vibrant tomato flavor without needing to strain them later.
  3. Simmering Symphony: In a large saucepan, combine the chopped onions (or grated tomatoes and onions), water, and salt. Bring the mixture to a boil.
  4. Onion Farewell: Once the onions are softened and translucent (about 5 minutes), you can remove them from the pot if you prefer a smoother soup. If you like chunky vegetables, leave them in!
  5. Straining (Optional): If you opted for chopped tomatoes and want a perfectly smooth soup, strain the tomato mixture to remove any skins or seeds.
  6. The Pepper & Rice Show: Bring the strained tomato broth (or the pot with chopped tomatoes and onions) back to a boil. Add the chopped peppers and rinsed rice. Let the mixture simmer for 20-25 minutes, or until the rice is cooked through.
  7. Sweet Finish: Once the rice is tender, stir in the sugar for a touch of sweetness that balances the acidity of the tomatoes.
  8. Green Power: Finally, add your chopped greens of choice and stir them in until wilted. This adds a pop of color, nutrients, and a fresh flavor dimension.
