A Taste of Summer: Refreshing Zucchini Borscht

Looking for a light and flavorful soup to brighten your day? Look no further than this zucchini borscht recipe! Packed with fresh summer vegetables and a delightful tang from the borscht, this dish is perfect for a satisfying lunch or a light dinner.

Ingredients:

  • 2 zucchini, diced
  • 2-3 ripe tomatoes, diced
  • 2 bell peppers (any color), diced
  • 2 onions, chopped
  • 500 ml (approx. 2 cups) borscht (beet kvass)
  • Some herbs: dill and/or parsley
  • 1 large egg
  • 1/2 cup sour cream

Instructions:

  1. Sauté the base: In a large pot, heat some olive oil over medium heat. Cook the onions for 5 minutes.

  2. Introduce the vegetables: Add the diced bell peppers and tomatoes to the pot. Sauté for another 5 minutes, stirring occasionally, to allow the flavors to meld.

  3. Let it simmer: Pour in the cold salted water (enough to cover the vegetables). Simmer for 10 minutes.

  4. Welcome the zucchini: Add the diced zucchini to the simmering broth and cook for an additional 10 minutes, or until tender-crisp.

  5. Flavorful finish: Now comes the magic! Pour in the prepared borscht and chopped fresh herbs. Give it a good stir and let everything simmer for a few more minutes.

  6. The creamy touch (optional): While the soup cools slightly, whisk together the egg yolk and sour cream in a small bowl. Slowly drizzle this mixture into the soup, stirring constantly, to prevent curdling.

  7. Serve and savor: Once heated through but not boiling, ladle your zucchini borscht into bowls and garnish with a dollop of sour cream and a sprinkle of fresh herbs. Enjoy it warm with a side of crusty bread for a complete and comforting meal.

Tips:

  • If you prefer a smoother soup, blend a portion of the cooked vegetables before adding them back to the pot.
  • Experiment with different vegetables like carrots, celery, or green beans.
  • For a heartier soup, you can add cooked shredded chicken or chickpeas.
  • Don't have fresh herbs? You can substitute 1-2 teaspoons of dried herbs.

This zucchini borscht recipe is a vibrant and delicious way to celebrate the bounty of summer vegetables. With its simple ingredients and easy preparation, it's sure to become a new favorite in your kitchen!
