Ingredients:
- 500g tinned green beans, drained
- 200g smoked pork ribs (back ribs or baby back ribs work well)
- 1 small onion, chopped
- 1 parsley root, chopped (you can substitute celery root if you can't find parsley root)
- 1/2 tablespoon flour
- Salt, to taste
- Fresh mint, chopped (optional, for garnish)
Instructions:
- Bring the Smokiness: In a large pot, heat enough water to cover the ribs. Add the smoked pork ribs and bring to a boil. Reduce heat and simmer for 1-1.5 hours, or until the ribs are tender and falling off the bone.
- Building Flavor: While the ribs simmer, sauté the chopped onion and parsley root in a pan with a little oil until softened and translucent.
- Simmering Symphony: Once the ribs are cooked, remove them from the pot and set them aside to cool slightly. Shred the meat from the bones, discarding any fat. Add the chopped green beans and the sautéed vegetables back to the pot with the broth. Bring to a simmer and cook for 10-15 minutes, until the green beans are tender-crisp.
- Thicken Up (Optional): In a small bowl, whisk together the flour with a little cold water to make a slurry. Slowly drizzle the slurry into the simmering soup, stirring constantly, until the soup reaches your desired thickness. Season with salt to taste.
- Bringing it Home: Finally, stir in the shredded pork from the ribs.
- Fresh Touch (Optional): For a final touch of brightness, garnish the soup with freshly chopped mint before serving.
Tips:
- If you can't find smoked pork ribs, you can use regular pork ribs and brown them in the pan before adding them to the water for simmering. This will add a deeper flavor.
- Don't throw away the leftover broth from cooking the ribs. You can use it for another soup or stew later.
- Like your soup extra hearty? Add some chopped potatoes or carrots along with the green beans for an even more substantial meal.
This smoky green bean soup with pulled pork ribs is sure to become a new favorite. It's comforting, flavorful, and can be easily customized to your preferences. So grab a bowl, cozy up, and enjoy a taste of smoky goodness!
