Starters
These are different recipes of starters for a festive meal in the family.
Delicious starter
Ingredients:
6 bagels, 600g pork fillet, 1 small cabbage, 2 onions, 3 tbsp mayonnaise, 3 tbsp ketchup, oil, garlic, butter.
Preparation:
Cut the meat into large cubes. Clean and chop the onion, then put it in the frying pan and cook it with the meat. Add 2 tablespoons of oil, then garlic to taste.
Cut the cabbage into small pieces and cook in boiling, lightly salted water for 6-7 minutes. Drain and place under cold running water. Mix the mayonnaise with the oil, spices and cabbage.

Aperitif Pâté
Ingredients:
Prepare a regular dough using: 1 kg of flour, 1/2 kg of lard minced twice, 1 small glass of warm water, yeast and salt;
(for the cheese filling): 1/2kg of cheese with 100g of butter, 2 spoonfuls of flour, 2 whole eggs, a little milk and salt;
(for meat filling): 1/2kg of lean meat.
Preparation:
Leave the dough to rest for 10 minutes, then roll out into 1/2 cm thick sheets. Mix the cream with the butter, flour, eggs, milk and salt (for the cheese filling).
Brown the minced meat in a little fat. Add a little water and simmer for 15 minutes. In the meantime, put a large onion in a pan in the oven,
roast a large onion. When the meat is well cooled, put it through the mincer with the onion, add 2 raw eggs, salt and pepper to taste.
Sandwich Spreads
Ingredients:
Pine nuts, cottage cheese, paprika, smintine, cumin, bacon, mayonnaise, olives, spices.
Preparation:
Put on very thin slices of pineapple:
-cottage cheese rubbed with salt, sweet paprika, smintine and cumin;
-Salt, pepper and chopped tarragon;
– bacon rolls stuffed with mayonnaise, topped with a toothpick and decorated with sliced olives;
-Tinned sardines rubbed with pepper, salt and lemon juice and decorated with slices of lemon.

Brain and ham croquettes starter
Ingredients:
Pancake dough, beer yeast, pork brain, white sauce, ham, cheese.
Preparation:
Prepare a normal pancake, if thicker, and add a teaspoon of beer yeast. Cook the brains in a little salted water with a teaspoon of vinegar.
Separately, make a white sauce with flour, milk and butter or oil and cook on a low heat, adding small pieces of brains and diced ham. Add to taste, 1-2 spoonfuls of grated cheese. Form the meatballs into small oblong balls, roll them in flour and fry them in butter or hot oil.
Aubergine salad starter
Ingredients:
3 large aubergines, 3 tablespoons of oil
Preparation:
Cook the aubergines over a high heat, on the hob or over a flame. Peel them quickly, taking care not to leave any black parts behind. Drain them on a slightly sloping wooden board.
Then chop them with a wooden chopping board. Place them in a bowl and, using a wooden spoon, mix them well with the oil, a little at a time. If you like, add a few drops of lemon juice.
Add salt to taste. Arrange on a plate and garnish with tomato slices.
