Smoked Pork Ribs with Chicken Liver

Ingredients:
Smoked pork ribs (1/2 kg), chicken liver (1/2 kg), pepper, toothpicks.

Preparation:
Cut the ribs into thin slices (about 1/2 cm.). Cut the washed liver in half and place on top of each rib slice. Lightly pepper and roll.
Fix them with toothpicks and put them in the oven dish, ungreased, because the lard will remain! Bake in the oven for 15-20 minutes. Do not add salt,

Ingredients:
750g liver, 1 spoonful of flour, 2 spoonfuls of oil, salt

Preparation:
The liver is cut into thick slices, coated in flour and fried in hot oil.

How to serve:
Serve with salt.

Spinach rolls

Ingredients:
6 buns, 1 cup of milk, 1 jar of spinach (800 gr.), 1 egg, a knob of butter, vegetables (salt), pepper, 100 gr. of pressed ham (or Parisian, bacon), a little grated cheese.

Preparation:
Cut the tops off the rolls, remove the seeds and sprinkle with warm milk. Composition of the filling: drain the juice from the spinach in the jar, chop finely and mix with 1 egg,
1 knob of butter, vegetables, pepper and diced sausage. Put this mixture on the fire until it boils. Fill the 6 buns, sprinkle a little grated cheese on top and close the lids.
Put the lids on. Grease the rolls with butter and put them in the oven for 20-30 minutes.

How to serve:
They are served hot, but they are also delicious cold.

Ingredients:
6 slices of ham, 4 spoonfuls of butter, 2 spoonfuls of finely chopped greens, 3 hard boiled eggs, 2 onions, salt, pepper.

Preparation:
Rub the butter with salt and pepper and mix with the greens. Brush each slice of ham with this mixture.
Then sprinkle with very finely chopped onion, place egg slices on top, roll up and stick with toothpicks to prevent it from falling apart,
with toothpicks. Place the rolls on a buttered baking tray and bake in the oven on a low heat for 15 minutes.
