Eggs stuffed with mincemeat sauce
Ingredients:
4 eggs, 1 raw egg yolk, the core of a slice of softened bread, 1 teaspoon butter, 1/2 onion chopped and browned in butter, chopped dill and parsley, salt, pepper, 1 1/2 tablespoons of breadcrumbs, lettuce greens
Preparation:
The sauce: 3/4 cup mince, 1 teaspoon flour. Hard boil the eggs. After they have cooled, clean and cut in half lengthwise. Carefully remove the yolks, put them in a bowl and rub them with butter, then add the raw yolk, softened pine nut crumbs, chopped greens, onion, salt and pepper. Fill each half of the egg white with this mixture in such a way as to give it the shape of a whole egg. Dip in breadcrumbs and fry in butter. Then place them in a small saucepan, pour over the sour cream well mixed with flour and let it simmer slowly over very low heat.
How to serve:
Serve warm, on a plate garnished with lettuce leaves.
Surprise egg with spicy sauce
Ingredients:
6 eggs, 30 g butter, 1 tablespoon chopped bacon, 1 teaspoon sardine paste, 1 teaspoon finely chopped onion, 1 teaspoon mustard, 1 teaspoon chopped green parsley, salt, pepper, 2 cups hot sauce made from: 1 cup mayonnaise, 1 tablespoon grated horseradish, 2 tablespoons mint, 1 teaspoon mustard (mix mayonnaise lightly with mint, mustard, horseradish and salt)
Preparation:
Clean the hard-boiled eggs from the shells, then cut the whites of each egg to the yolk. Slowly remove the yolk (so that the white remains whole), rub with butter, sardine paste, mustard, salt, pepper, add bacon, chopped onion and greens. Fill the eggs by passing the mixture through a special sprit. Pour the cold sauce into the dish and arrange the eggs in a zigzag pattern.
How to serve:
Garnish with parsley and olives.
Eggs stuffed with cheese
Ingredients:
6 hard-boiled eggs, 2 raw yolks, 2 tablespoons grated cheese, 1 tablespoon breadcrumbs, salt, white pepper, 1 tablespoon butter; Sauce: 1 cup breadcrumbs, a little flour
Preparation:
Boil the 6 hard-boiled eggs, clean and cut in half lengthwise. Remove the yolks and rub them in a saucepan with the two raw yolks, put in turn. Add the grated cheese, a spoonful of smintina, salt and a little white pepper. Rub well, until it becomes a thick smintina. Fill the egg whites to the edges with this mixture. Sprinkle with grated Parmesan cheese and place on a buttered baking tray. Bake in the oven at high heat for about 10 minutes. Separately make a sauce from a cup of smintina with a little flour.
How to serve:
Place the eggs on the serving plate and pour the hot sauce around them.
