Partially boiled eggs

Ingredients:

Preparation:

The eggs must boil in such a way that the white is fully set, and the yolk is semi-congealed. The boiling methods and the secrets of success are the same as for soft eggs, only the boiling time is a little longer. I have to count 5-6 minutes for the first method, 4 minutes for the second and 10 minutes for the third.

How to serve:

Glutinous eggs can be served plain or with different hot sauces, white sauce, bechamel sauce, tomato sauce.

Soft-boiled eggs

Eggs are placed in boiling water. Let them boil for 5 minutes to get a well-coagulated egg white and for 3 and a half to four minutes to get a more or less cooked egg white. The boiling time will be extended by 30 seconds if the eggs are large.

Soft-boiled eggs with vegetables

Ingredients:

eggs, carrots, dried beans, spinach, endives, cauliflower.

Preparation:

Soft-boiled eggs can be served with sautéed or mashed vegetables: carrots, white beans, spinach, endives, cauliflower and other vegetables. Each person peel their fresh egg and puts it on the vegetables. Buttermilk with fresh butter and salt should not be missing from the table.

Soft-boiled eggs with potato croquettes (for one person)

Ingredients:

potato croquettes, eggs (2), white sauce (3 tablespoons).

Preparation:

Boil the eggs according to the known recipe. Place the cleaned eggs on the same plate as the croquettes. Pour the sauce on top and serve very hot.

Hard boiled eggs

Ingredients:

eggs.

Method of preparation:

The boiling time required to obtain hard-boiled eggs is 10 minutes from the first boil. If you exceede this time, the yolk hardens. After the eggs have boiled, keep them in cold water for a few seconds, to peel them easier.

Eggs stuffed with ham

Ingredients:

4 boiled eggs, mayonnaise sauce, 60 g of ham, 1 teaspoon of mustard, ground pepper, lettuce leaves

Preparation:

Peel hard the cracked eggs that have been boiled for several hours. Then cut in two along their width. Cut off a little of the rounded ends, so that the egg can stand vertically. Mix well the mayonnaise sauce with the mustard and chopped ham. The add pepper powder. Fill the boiled egg whites with this composition and smooth it with a knife. Place the eggs on a plate, on lettuce leaves.

You can prepare these in 35 minutes.

Soft-boiled eggs in tomato sauce

Ingredients:

eggs (6), parsley, pepper, salt, tomato paste (2 teaspoons).

Preparation:

Boil the eggs. Then prepare a tomato sauce by diluting the tomato paste with a cup of water. In a bowl, put the tomato sauce, the cleaned eggs and chopped parsley. Leave in the oven for two or three minutes until the eggs are well soaked with the sauce. A few pieces of ham and even cheese can be added to the tomato sauce.
